- 8 oz bow tie pasta
- 1.5 cups corn kernels
- 1.5 cups cherry tomatoes
- 0.5 small red onion
- 2 Tbsp fresh cilantro
- 1–2 avocados
- 0.5 cup plain Greek yogurt
- 0.25 cup fresh lime juice
- 2 cloves garlic
- 0.5 tsp salt
- 0.125 tsp cayenne
Instructions
- Cook the bow tie pasta according to package instructions until al dente. Drain and cool.
- While the pasta cooks, chop the red onion, halve the cherry tomatoes, and dice the avocados.
- In a large mixing bowl, combine the cooled pasta with corn, tomatoes, onion, cilantro, and avocado.
- In another bowl, whisk Greek yogurt, lime juice, chopped cilantro, minced garlic, salt, and cayenne until smooth.
- Pour the dressing over the pasta mixture and stir gently until well combined.
- Chill for at least 30 minutes before serving to enhance flavors.
