Instructions
- Preheat the oven to 450°F and position a rack in the lower third.
- Place 1 teaspoon of butter in each cup of a standard popover pan and heat in the oven until melted (3-5 minutes).
- In a medium bowl, whisk together milk and eggs until frothy; add melted butter, vanilla, flour, and salt, mixing until combined.
- Remove the hot pan from the oven and fill each cup about three-quarters full with batter; if desired, push a cream cheese cube into each center.
- Bake for about 20 minutes at 450°F, then reduce the temperature to 350°F and bake for an additional 15-18 minutes until golden brown.
- Make brown butter in a skillet over medium heat; brush warm popovers with brown butter and roll in cinnamon sugar.
