Ingredients
- 2 lbs boneless, skinless chicken breasts
- 1 tbsp olive oil
- 6 cloves garlic (minced)
- 4 cups low-sodium chicken broth
- 1.5 cups long-grain white rice (rinsed)
- 1 tsp dried parsley
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- Pat chicken breasts dry and season with salt, pepper, parsley, and thyme. Place in the slow cooker.
- Sprinkle minced garlic over the chicken and pour in the chicken broth.
- Cover and cook on LOW for 3-4 hours or HIGH for 2 hours until chicken is tender.
- Remove chicken, stir in rinsed rice into the broth, cover again, and cook on HIGH for another 30-45 minutes until rice is tender.
- Shred the chicken using two forks and mix back into the crockpot with the rice before serving.
