Instructions
- In a medium saucepan, simmer chopped rhubarb, sugar, and water over medium heat until tender (5-7 minutes). Let cool slightly.
- While cooling, wash and slice strawberries; set aside half for garnish.
- In a mixing bowl, whip heavy cream until soft peaks form.
- Fold cooled rhubarb mixture into whipped cream and gently add sliced strawberries until well combined.
