- 4 boneless chicken breasts (or 8 thighs)
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp dried oregano
- 1/4 tsp cayenne pepper (optional)
Instructions
- Prepare the brine by dissolving salt and sugar in warm water with smashed garlic.
- Submerge chicken in the brine for 30 minutes.
- Pat dry and rub with olive oil and seasoning mix.
- Preheat grill to medium-high and oil the grates.
- Grill chicken for about 7 minutes without moving it; then flip and cook for another 6 minutes until it reaches 165°F internally.
- Let rest under foil for 5 minutes before slicing.
