- 1.5 lbs boneless, skinless chicken thighs
- 3 tbsp maple syrup
- 2 tbsp Dijon mustard
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 2 medium sweet potatoes
- Salt and pepper to taste
- Fresh thyme for garnish
Instructions
- Preheat the oven to 425°F (220°C) and prepare a baking sheet.
- Cut sweet potatoes into cubes, toss with olive oil, smoked paprika, salt, and pepper; spread on one side of the baking sheet.
- Whisk together maple syrup, Dijon mustard, garlic, olive oil, thyme, salt, and pepper in a bowl.
- Pat chicken dry and place on the other side of the baking sheet; brush with half of the marinade.
- Roast for about 15 minutes; flip chicken and brush with remaining marinade while tossing sweet potatoes.
- Roast for another 10-15 minutes until chicken reaches 165°F (74°C) and sweet potatoes are tender.
- Serve in bowls garnished with optional toppings.
