  • 1.5 lbs boneless, skinless chicken thighs
  • 3 tbsp maple syrup
  • 2 tbsp Dijon mustard
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 2 medium sweet potatoes
  • Salt and pepper to taste
  • Fresh thyme for garnish

Instructions

  1. Preheat the oven to 425°F (220°C) and prepare a baking sheet.
  2. Cut sweet potatoes into cubes, toss with olive oil, smoked paprika, salt, and pepper; spread on one side of the baking sheet.
  3. Whisk together maple syrup, Dijon mustard, garlic, olive oil, thyme, salt, and pepper in a bowl.
  4. Pat chicken dry and place on the other side of the baking sheet; brush with half of the marinade.
  5. Roast for about 15 minutes; flip chicken and brush with remaining marinade while tossing sweet potatoes.
  6. Roast for another 10-15 minutes until chicken reaches 165°F (74°C) and sweet potatoes are tender.
  7. Serve in bowls garnished with optional toppings.
