Instructions
- In a large bowl, combine leafy greens with cherry tomatoes, cucumber, and red onion. Toss gently.
- In a small bowl or jar, whisk together apple cider vinegar, olive oil, Dijon mustard, salt, and pepper until smooth.
- Drizzle the dressing over the salad just before serving and toss gently to coat.
