  • ⅓ cup roasted pepitas (pumpkin seeds)
  • 2 small shallots (thinly sliced)
  • ½ cup fresh parsley leaves (chopped)
  • ½ cup fresh cilantro leaves (chopped)
  • 2 tablespoons fresh ginger (minced)
  • 1 tablespoon Dijon mustard
  • 2 teaspoons maple syrup or honey
  • 3 tablespoons lemon juice
  • 2 tablespoons olive oil
  • ½ teaspoon salt

Instructions

  1. Wash and slice celery into ¼-inch thick pieces.
  2. Thinly slice shallots and chop parsley and cilantro.
  3. In a mixing bowl, whisk together minced ginger, Dijon mustard, maple syrup (or honey), lemon juice, olive oil, and salt until combined.
  4. In a large bowl, combine sliced celery, shallots, herbs, and pepitas. Pour dressing over the salad mixture and toss gently until evenly coated.
