Instructions
- Wash and slice celery into ¼-inch thick pieces.
- Thinly slice shallots and chop parsley and cilantro.
- In a mixing bowl, whisk together minced ginger, Dijon mustard, maple syrup (or honey), lemon juice, olive oil, and salt until combined.
- In a large bowl, combine sliced celery, shallots, herbs, and pepitas. Pour dressing over the salad mixture and toss gently until evenly coated.
- Serve immediately or chill for enhanced flavor.
