- Salt and pepper, to taste (for tzatziki)
- 2 tablespoons fresh parsley, finely chopped
Instructions
- In a mixing bowl, combine ground chicken, egg, breadcrumbs, garlic, red onion, parsley, oregano, salt, pepper, and lemon juice. Mix gently until just combined.
- Shape the mixture into meatballs about 1½ inches in diameter.
- Heat olive oil in a skillet over medium heat. Cook the meatballs for 8–10 minutes until golden brown and fully cooked (165°F internal temperature).
- For tzatziki sauce: In another bowl, mix Greek yogurt with grated cucumber (moisture removed), minced garlic, dill, lemon juice, olive oil, salt, and pepper until smooth. Chill before serving.
