- 4 (6 oz) skinless salmon fillets
- 3 Tbsp olive oil
- 3 cloves garlic
- 1 large mango
- 1 large avocado
- 1 ½ cups jasmine rice
- 1 ¼ cups canned coconut milk
- 1 ½ cups Zico Coconut Water
Instructions
- In a bowl, combine olive oil, lime zest, lime juice, crushed garlic, salt, and pepper. Marinate salmon fillets for about 15 minutes.
- Cook jasmine rice in a saucepan or rice cooker with Zico coconut water, coconut milk, and salt until fluffy.
- Mix diced mango, red bell pepper, cilantro, red onion, avocado, lime juice, olive oil, and seasoning for the salsa.
- Grill marinated salmon over medium-high heat for 6–8 minutes per side until flaky.
- Serve grilled salmon on coconut rice topped with mango salsa.
