  • 1 yellow bell pepper (diced)

  • 1 lemon (juiced)
  • 1/2 cup Italian dressing
  • 1.5 cups cottage cheese
  • Salt and pepper (to taste)

Instructions

  1. Cook the rotini in salted boiling water according to package instructions until al dente.
  2. While the pasta cooks, prepare the vegetables: dice the cucumber, bell pepper, and onion; halve the tomatoes; and chop the spinach.
  3. Drain the cooked pasta in a colander and rinse under cold water to cool.
  4. In a large mixing bowl, combine the cooled pasta with vegetables, cottage cheese, Italian dressing, lemon juice, oregano, salt, and pepper.
  5. Mix well and serve immediately or chill for about 30 minutes before serving. Garnish with fresh parsley.
