Instructions
- Preheat oven to 350°F (175°C) and line a cupcake tin.
- In a bowl, mix flour, baking powder, and salt; set aside.
- In another bowl, beat butter and sugar until fluffy. Add eggs one at a time, then mix in honey, milk, and vanilla.
- Gradually add dry ingredients to wet mixture; fold in diced peaches.
- Fill cupcake liners two-thirds full and bake for 20-22 minutes or until a toothpick comes out clean.
- For the cream cheese filling, beat softened cream cheese with sugar; mix in egg yolk and vanilla.
- Once cooled, create holes in each cupcake and fill with cream cheese mixture.
- Garnish with peach slices, drizzle honey, and sprinkle crushed graham crackers.
