  • 2 chicken breasts (about 1 lb), cut into strips
  • 10 jumbo shrimp (optional)
  • 3 tablespoons jerk seasoning
  • 2 cloves garlic (minced)
  • 1 tablespoon vegetable oil
  • 2 cups vegetable stock
  • 4 cups dried pasta
  • ½ cup heavy cream
  • ½ cup grated parmesan cheese
  • 3 bell peppers (sliced)
  • ½ cup green onions (sliced)
  • Fresh parsley (for garnish)

Instructions

  1. Sauté chicken strips in oil in the Instant Pot with jerk seasoning for about 3–4 minutes. Add garlic and sauté for an extra minute.
  2. Layer dried pasta over the chicken and pour in vegetable stock until it slightly covers the pasta.
  3. Seal the Instant Pot lid and set vent to sealing. Cook on Manual/Pressure Cook for 5 minutes.
  4. Perform quick release by switching the valve to venting and carefully open the lid.
  5. Stir, adjust liquid if necessary, then mix in heavy cream, parmesan cheese, and bell peppers. Cover for a few minutes to steam.
  6. Serve warm topped with green onions and parsley.
