- 2 chicken breasts (about 1 lb), cut into strips
- 10 jumbo shrimp (optional)
- 3 tablespoons jerk seasoning
- 2 cloves garlic (minced)
- 1 tablespoon vegetable oil
- 2 cups vegetable stock
- 4 cups dried pasta
- ½ cup heavy cream
- ½ cup grated parmesan cheese
- 3 bell peppers (sliced)
- ½ cup green onions (sliced)
- Fresh parsley (for garnish)
Instructions
- Sauté chicken strips in oil in the Instant Pot with jerk seasoning for about 3–4 minutes. Add garlic and sauté for an extra minute.
- Layer dried pasta over the chicken and pour in vegetable stock until it slightly covers the pasta.
- Seal the Instant Pot lid and set vent to sealing. Cook on Manual/Pressure Cook for 5 minutes.
- Perform quick release by switching the valve to venting and carefully open the lid.
- Stir, adjust liquid if necessary, then mix in heavy cream, parmesan cheese, and bell peppers. Cover for a few minutes to steam.
- Serve warm topped with green onions and parsley.
