- 1 cup pitted dates, chopped
- 1 ½ cups all-purpose flour
- ¾ cup granulated sugar
- 1 tsp baking powder
- ½ cup walnuts, toasted and chopped
- 2 large eggs
- ⅓ cup vegetable oil
- 2 tsp espresso powder
- 1 cup powdered sugar
- 2 tbsp strong brewed coffee or espresso
Instructions
- Preheat oven to 350°F (175°C). Grease an 8-inch square baking pan.
- Soak chopped dates in hot water for 10 minutes; drain well.
- In a bowl, whisk together flour, sugar, baking powder, and a pinch of salt.
- In another bowl, mix eggs and oil; stir in soaked dates and walnuts.
- Combine wet and dry ingredients until just mixed; avoid overmixing.
- Pour batter into prepared pan and bake for 30-35 minutes until a toothpick comes out clean.
- While cooling, mix powdered sugar with coffee or espresso to create the glaze; drizzle over cooled cake.
