  • 6 jalapenos (halved, seeds removed)
  • 2 tbsp avocado or olive oil
  • 6 slices turkey bacon (diced)
  • 16 ounces Fiber Gourmet light elbow pasta
  • 1/2 cup whipped cream cheese
  • 1 1/2 cups plain Greek yogurt
  • 6 ounces cheddar cheese (shredded)
  • Pink salt and cracked black pepper (to taste)

Instructions

  1. Boil salted water in a large pot. Preheat your oven to broil.
  2. Toss halved jalapenos with oil and broil for about 10 minutes until charred.
  3. Cook the pasta according to package instructions; drain well.
  4. In a mixing bowl, combine the drained pasta with whipped cream cheese until mixed.
  5. Place roasted jalapenos in a bag for 20 minutes to loosen skins; chop finely afterward.
