Ingredients
- 6 jalapenos (halved, seeds removed)
- 2 tbsp avocado or olive oil
- 6 slices turkey bacon (diced)
- 16 ounces Fiber Gourmet light elbow pasta
- 1/2 cup whipped cream cheese
- 1 1/2 cups plain Greek yogurt
- 6 ounces cheddar cheese (shredded)
- Pink salt and cracked black pepper (to taste)
Instructions
- Boil salted water in a large pot. Preheat your oven to broil.
- Toss halved jalapenos with oil and broil for about 10 minutes until charred.
- Cook the pasta according to package instructions; drain well.
- In a mixing bowl, combine the drained pasta with whipped cream cheese until mixed.
- Place roasted jalapenos in a bag for 20 minutes to loosen skins; chop finely afterward.
- Mix chopped jalapenos with turkey bacon, Greek yogurt, garlic powder, onion powder, salt, pepper, and cheddar into the pasta bowl.
- Chill in the refrigerator before serving.
