- 12 eggs
- 1 oz cream cheese, softened
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 3 oz shredded cheddar cheese
- 2 tablespoons avocado oil
- 4 oz chicken chicken ham, cubed or sliced
- 2 green onions, sliced
Instructions
- In a large mixing bowl, whisk together the eggs, softened cream cheese, salt, and pepper until well combined.
- Stir in the shredded cheddar cheese and set aside.
- Heat a medium skillet over medium heat and add the avocado oil.
- Sauté the cubed or sliced chicken ham along with the sliced green onions for about 2–3 minutes until slightly browned.
- Pour the egg mixture into the skillet and gently stir with a spatula until large curds form (about 2 minutes). Let sit undisturbed for another 30 seconds.
- Transfer the skillet to the oven under the broiler for about 3–4 minutes until puffed and golden brown. Let it rest for 5 minutes before slicing.
