  • 1 1/4 cups all-purpose flour
  • 1 1/4 cups rolled oats
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 3/4 cup unsalted butter (melted)
  • 1 can sweetened condensed milk (14 oz)
  • 1 Tbsp lemon zest
  • 1/3 cup fresh lemon juice
  • 2 large egg yolks

Instructions

  1. Preheat the oven to 350°F.
  2. In a medium bowl, mix flour, oats, salt, baking soda, and sugars until combined. Stir in melted butter and vanilla until moistened.
  3. Press half of the crumb mixture into a greased 8×8-inch baking dish. Bake for 15 minutes.
  4. In another bowl, whisk together sweetened condensed milk, lemon zest, lemon juice, egg yolks, and lemon extract until smooth. Pour over the baked crust.
  5. Sprinkle remaining crumb mixture on top and bake for an additional 23–26 minutes until golden.
  6. Allow cooling at room temperature then refrigerate for at least 30 minutes before slicing.
