- 1 1/4 cups all-purpose flour
- 1 1/4 cups rolled oats
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar
- 3/4 cup unsalted butter (melted)
- 1 can sweetened condensed milk (14 oz)
- 1 Tbsp lemon zest
- 1/3 cup fresh lemon juice
- 2 large egg yolks
Instructions
- Preheat the oven to 350°F.
- In a medium bowl, mix flour, oats, salt, baking soda, and sugars until combined. Stir in melted butter and vanilla until moistened.
- Press half of the crumb mixture into a greased 8×8-inch baking dish. Bake for 15 minutes.
- In another bowl, whisk together sweetened condensed milk, lemon zest, lemon juice, egg yolks, and lemon extract until smooth. Pour over the baked crust.
- Sprinkle remaining crumb mixture on top and bake for an additional 23–26 minutes until golden.
- Allow cooling at room temperature then refrigerate for at least 30 minutes before slicing.
