- 15 oz mandarin oranges (drained)
- 1/2 cup sliced almonds
- Homemade teriyaki dressing (made from teriyaki sauce, rice apple vinegar, olive oil, sesame oil, honey, minced garlic, minced ginger, salt, and black pepper)
Instructions
- Cook the bow tie noodles according to package instructions in a large pot of salted boiling water until al dente. Drain and allow to cool.
- In a mixing bowl, whisk together the teriyaki sauce, rice apple vinegar, olive oil, sesame oil, honey, minced garlic, minced ginger, salt, and black pepper until well combined.
- In a large mixing bowl, combine the cooled noodles with spinach, diced red bell pepper, mandarin oranges, sliced almonds, and chopped cilantro.
- Pour the dressing over the salad mixture and toss gently until everything is evenly coated.
- Garnish with freshly chopped parsley before serving.
