Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, cream together the butter and powdered sugar until light and fluffy.
- Add one whole egg, one egg yolk, peppermint extract, and green food coloring; mix until smooth.
- In another bowl, whisk together flour, baking powder, and salt; gradually fold into the wet mixture until just combined.
- Roll dough into 1-inch balls and place them on the prepared baking sheet.
- Bake for 7-9 minutes until lightly golden around the edges but soft in the center.
- Remove from oven, press a chocolate kiss into each cookie’s center while they cool on the sheet for two minutes.
