Instructions
- Wash the strawberry tops thoroughly to remove dirt and pesticides.
- Cut the tops off the strawberries and set them aside, using the remaining fruit as desired.
- In a small pot, combine the strawberry tops and water.
- Add sugar to achieve a 1:1 sugar-to-water ratio.
- Bring to a boil, then reduce heat and simmer for 10-15 minutes until the mixture turns red.
- Strain the syrup through a fine mesh strainer to remove solids, pressing down to extract maximum liquid.
- Return the strained liquid to the pot, bring it back to a boil, and reduce until slightly thickened.
- Allow to cool before storing in jars.
