Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a stand mixer, cream together softened butter, peanut butter, white sugar, and brown sugar until fluffy.
- Add eggs one at a time and mix in vanilla extract until well combined.
- In another bowl, whisk together flour, oats, baking soda, and salt. Gradually add this dry mixture to the wet ingredients while mixing on low speed.
- Fold in mashed bananas and chocolate chips gently using a spatula.
- Drop rounded tablespoons of dough onto the prepared baking sheet with space between each scoop.
- Bake for about 12 minutes or until the edges are lightly browned. Allow cookies to cool on a wire rack before serving.
