Ingredients
- 2–3 scoops rainbow sherbet
- ½ cup coconut milk or coconut cream
- ½ cup lemon-lime soda (like Sprite)
- 1 oz Malibu rum (optional for cocktail version)
- Whipped cream for topping
- Mini paper umbrella or rainbow straw for garnish
Instructions
- Chill your tall glass in the freezer for 10–15 minutes.
- Add 2–3 scoops of rainbow sherbet into the chilled glass.
- Slowly pour in ½ cup of coconut milk or coconut cream over the sherbet.
- If making a cocktail, drizzle 1 oz of Malibu rum on top; skip for mocktail.
- Gently top with ½ cup of lemon-lime soda, watching it foam and bubble.
- Add whipped cream generously on top.
- Garnish with a mini paper umbrella or colorful straw before serving.
