- 1 small shallot (thinly sliced)
- 4 ounces mushrooms (halved)
- 4 ounces baby spinach
- 1 large egg
- Chives (for garnish)
Instructions
- In a saucepan, bring water to a boil. Add rolled oats and pinch of salt; reduce heat and simmer for about 5-7 minutes until creamy. Stir in Parmesan cheese.
- In a skillet, heat ½ tablespoon olive oil over medium heat. Sauté shallots until translucent, then add mushrooms until golden brown. Toss in spinach until wilted.
- In another skillet, heat remaining olive oil and fry the egg until whites are set but yolk remains runny.
- Serve oatmeal in a bowl, top with sautéed vegetables and fried egg, garnished with chives.
