Instructions
- Preheat your oven to 375°F (190°C).
- In a cast iron skillet, heat olive oil over medium heat. Sauté sliced onion and red bell pepper for about 15 minutes until soft. Add minced garlic and cook for an additional minute.
- Pour in the diced tomatoes and stir in cumin, paprika, coriander, salt, and pepper. Bring to a boil then reduce heat to low and simmer until thickened (about 10-15 minutes). Stir in crumbled feta.
- Create small nests in the sauce and crack eggs into each nest. Season with salt and pepper.
- Transfer the skillet to the oven and bake for 8-12 minutes until eggs are set but slightly runny.
- Garnish with fresh cilantro before serving hot with crusty bread or pita.
