Instructions
- Preheat your oven broiler and prepare baguette slices by brushing them lightly with olive oil. Broil until golden brown, about 30 seconds.
- In a fry pan over medium heat, melt butter and sauté the shiitake mushrooms until browned, approximately 5 minutes.
- Stir in minced anchovies and garlic; cook until fragrant, about 30-45 seconds.
- Add capers and parsley; deglaze with dry vermouth and season with salt and pepper.
- Spread goat cheese on each toasted baguette slice, then top generously with the mushroom mixture.
- Serve warm or at room temperature.
