Instructions
- Preheat your oven to 350°F (175°C) and prepare a muffin tin by greasing it or lining with paper liners.
- In a bowl, whisk together flour and salt. In another bowl, beat the eggs, then mix in olive oil and granulated sugar (3 tbsp) along with lemon zest until smooth.
- Combine wet ingredients into dry ingredients gently without overmixing.
- In a separate bowl, blend Ricotta cheese with vanilla extract and lemon juice until creamy.
- Spoon half the batter into the muffin cups, add a dollop of Ricotta mixture, then cover with remaining batter.
- Bake for about 50 minutes or until golden brown; cool before serving.
