Instructions
- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine flour, sugar, baking powder, and salt. Cut in cold butter until crumbly. Gradually add buttermilk until just combined.
- Drop spoonfuls onto the prepared baking sheet and bake for 12-15 minutes until golden.
- For lemon curd, whisk eggs, sugar, and lemon juice in a saucepan over medium heat until thickened (about 10 minutes). Let cool completely.
- Whip cream with powdered sugar until soft peaks form.
- Assemble by slicing shortcakes in half horizontally, spreading lemon curd on the bottom half, adding strawberries, topping with whipped cream, and placing the other half on top.
