- 1/2 lb fresh green beans (any variety)
- 4 ears fresh corn (shucked)
- 5 tablespoons butter
- Salt and pepper (to taste)
- 1 cup assorted fresh herbs (basil, chives, thyme, rosemary, tarragon, chervil, marjoram, parsley)
- 2 tablespoons fresh parsley (for garnish)
Instructions
- Bring a large pot of salted water to a boil and prepare an ice bath.
- Cook the green beans in boiling water for about 2 minutes until tender-crisp. Transfer them to the ice bath to cool.
- Place the corn in the boiling water and turn off the heat; let it sit for about 5 minutes before transferring it to the ice bath.
- Cut kernels off the corn cob using a knife over a bowl.
- In a sauté pan over medium heat, melt the butter; add corn and green beans along with salt and pepper. Toss gently until warmed through.
- Just before serving, add three-quarters of your chopped herbs and toss to combine. Garnish with remaining herbs.
