Ingredients
- 2 cups cooked chicken ham, diced
- 1 (14 oz) can pineapple tidbits, drained (reserve juice)
- 8 oz rotini or bowtie pasta
- 1 red bell pepper, diced
- ½ cup shredded carrots (optional)
- 2 green onions, sliced thin
- ½ cup mayonnaise
- ¼ cup sour cream
- ⅓ cup reserved pineapple juice
- 1 tablespoon Dijon mustard
- 1 teaspoon apple cider vinegar
- 1 teaspoon honey
- ¼ teaspoon garlic powder
- Salt & pepper, to taste
Instructions
- Cook pasta in salted water until tender. Rinse under cold water and drain.
- In a mixing bowl, whisk together mayonnaise, sour cream, reserved pineapple juice, Dijon mustard, apple cider vinegar, honey, garlic powder, salt & pepper until smooth.
- In a large bowl, combine cooled pasta with chicken ham, pineapple tidbits, diced red bell pepper, sliced green onions, and shredded carrots. Mix well.
- Drizzle dressing over pasta mixture and fold gently to combine.
- Chill in the fridge for at least one hour before serving.
