  • 2 cups cooked chicken ham, diced
  • 1 (14 oz) can pineapple tidbits, drained (reserve juice)
  • 8 oz rotini or bowtie pasta
  • 1 red bell pepper, diced
  • ½ cup shredded carrots (optional)
  • 2 green onions, sliced thin
  • ½ cup mayonnaise
  • ¼ cup sour cream
  • ⅓ cup reserved pineapple juice
  • 1 tablespoon Dijon mustard
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon honey
  • ¼ teaspoon garlic powder
  • Salt & pepper, to taste

Instructions

  1. Cook pasta in salted water until tender. Rinse under cold water and drain.
  2. In a mixing bowl, whisk together mayonnaise, sour cream, reserved pineapple juice, Dijon mustard, apple cider vinegar, honey, garlic powder, salt & pepper until smooth.
  3. In a large bowl, combine cooled pasta with chicken ham, pineapple tidbits, diced red bell pepper, sliced green onions, and shredded carrots. Mix well.
  4. Drizzle dressing over pasta mixture and fold gently to combine.
  5. Chill in the fridge for at least one hour before serving.
