- 1–1 ½ pounds boneless skinless chicken breasts or thighs
- 1 package (12 ounces) turkey bacon
- ½ cup low-sodium soy sauce
- ½ cup sugar
- ¼ cup apple cider vinegar
- 1 clove garlic
- ½ teaspoon ground ginger
- Freshly ground pepper
Instructions
- In a mixing bowl, combine soy sauce, sugar, apple cider vinegar, minced garlic, ginger, and pepper. Whisk until the sugar dissolves.
- Cut the chicken into bite-sized pieces and add to the marinade. Let it soak for at least 30 minutes.
- Preheat your grill or oven to medium-high heat. Wrap each piece of marinated chicken with turkey bacon and secure with skewers.
- Cook on the grill for about 14 minutes or until the chicken is fully cooked and the bacon is crispy, turning occasionally.
- Allow skewers to rest before serving. Garnish with fresh parsley.
