Instructions
- Rinse the butter beans under cold water.
- Heat olive oil in a large pan over medium heat.
- Add diced onion and sauté until translucent (about 5 minutes).
- Stir in minced garlic, thyme, and rosemary; cook for another minute.
- Combine rinsed butter beans with vegetable broth in the pan.
- Allow to simmer gently for about 15 minutes, stirring occasionally.
- Season with salt, pepper, and lemon juice according to taste.
- Serve warm garnished with chopped parsley.
