Instructions
- Prepare the watermelon by removing its rind and cutting it into bite-sized cubes.
- Chop the mint leaves finely and crumble the feta cheese.
- In a bowl, whisk together olive oil, lime juice, lime zest, kosher salt, and honey until well combined.
- In a large serving bowl, combine cubed watermelon, sliced cucumbers, arugula, crumbled feta cheese, and chopped mint.
- Drizzle the dressing over the salad and gently toss to combine all ingredients evenly.
- Adjust seasoning if necessary and serve cold.
